Thokku is a thick consistent gravy made with tomatoes, tamarind along with any
veggies.Variety of thokku can be made from different vegetables and come for few days
without spoil. Now, I am going to make this thokku with Brinjal/egg plant/Katharikkai. We
can mix this thokku with rice, chappathi, idli, dosas. Let’s get started.

Ingredients:
Brinjal/ Egg plant - 200 grm
Chopped Onion - 1
Chopped tomato - 1
Ginger garlic paste - 1 tsp
Mustard seed - ½ tsp
Urad dhal - ½ tsp
Cumin seed - 1 tsp
Fenugreek seed - ½ tsp
Green Cardamom - 2
Turmeric powder - ½ tsp
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam masala - ½ tsp
Tamarind juice taken from 1 gooseberry size
Curry leaves - 2 spring
Coriander leaves for seasoning
Salt as required  
Sesame oil for seasoning
Steps:
Heat 3 tsp of sesame oil in a pan.
Once oil hot add ½ tsp mustard seed, ½ tsp urad dhal, 1 tsp cumin seeds, ½ tsp fenugreek
seeds, 2 green cardamom.
Once mustard start spluttering, add 2 spring curry leaves and fry it.
Then add 1 chopped onion and cook till translucent.
Now add  1 tsp ginger garlic paste and fry it.
Then add 1 chopped tomato and required salt and cook for 1 minute.
Now add ½ tsp turmeric powder, 1 tsp red chilli powder, 1 tsp coriander powder, ½ tsp
garam masala powder and stir it.  Then add 200 gram cubed brinjal and stir it thoroughly.
Then add tamarind extract taken from 1 gooseberry size and stir it and cook for 2 minutes.
Later add 1 cup of water and cook for another 5 minutes.
Finally garnish with coriander leaves and stir it.

Now tasty Brinjal thokku is ready to serve. This will be very tasty for rice or chappathi.
