Mutton Kuzhambu /Mutton Gravy / Mutton Curry

I like spicy non veg cooking once in a week. It’s not only mouth watering and makes you feel
like you had a feast. After eating non veg, using toothpick for picking the left-over meat from
tooth also a kind of joy.  Mutton Gravy or Mutton Curry or Mutton Kuzhambu is one of
them. This is obviously only for those who like a little spice in their dishes. You can eat this
with rice, chappati, dosa, idli, puttu, kappa. This meal can be made easily in a pressure
cooker which is the easiest way. However cooking the normal way takes a little longer and its
adds more to the flavours. Let’s see how to make now.

Mutton - 3 pound
Onion -2
Big Tomato - 1
Turmeric powder -1 tsp
Red chilli powder - 2 tsp
Coriander powder - 1 tsp
Garam masala -½ tsp
Ginger garlic paste - 1 tsp
Cinnamon stick - 1 inch
Cloves - 2
Green cardamom - 3
Small Bay leaf  - 1
Fennel seeds - ½ tsp
Cumin seeds - ½ tsp
Chopped coriander leaves - 2
Salt as required
Oil for seasoning
Heat a pressure cooker pan with 2 tsp of oil.
Once oil hot add 1-½ pound washed mutton pieces and mix it.
Let it fry till the color changes.
Once color changes add required salt, 1 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp
ginger garlic paste and mix it.
Add just 1 cup of water and close with lid. Pressure cook this for 7 to 8 whistles. Switch off
the flame and leave for some time to pressure goes off automatically.
In parallel, heat 3 tsp of oil in a pan. Once oil hot, add whole spices. This includes 1 inch
cinnamon stick, 3 green cardamom, 3 cloves, 1 small bay leaf, ½ tsp fennel seeds, ½ tsp
cumin seeds and fry it.
Then add 2 chopped onion and fry it until translucent.  
After that add 1 chopped big tomato and cook until wilted.
With this add required salt (Note that we added salt already with mutton).
Then add 2 tsp chopped coriander leaves.
Now off course Add 1 tsp red chilli powder, 1 tsp coriander powder , ½ tsp garam masala
and cook until raw smell goes out. Add ½ cup water if needed.
Now add cooked mutton with gravy and mix it. Bring this to boil.
Now add water based on your consistency.
Close with lid and cook for another 10 mins.
Finally garnish with coriander leaves.

Now the easy and tasty mutton gravy is ready to serve.

Goat Paya or Mutton Paya

Goat paya or mutton is one of the very famous non-veg recipe in south india. This is best
known street food for the Appam gravy. There is much nutritional values in the goat legs.
People also will make goat leg soup. There is much demand for the paya in south Indian
butcher shops. Usually, people will reserve one day before at butcher shop to get paya. As
goat legs will be smoked and cleaned, the smoky taste will give extra flavor to the recipe.
Let’s make goat paya in our kitchen today.

Goat paya - 1 kg
Onion -2
Tomato - 2
Bay leaf - 2
Cinnamon stick - 1 inch
Cardamon - 2
Cloves - 3
Black peppercorns - 5 to 6
Ginger garlic paste - 2 tsp
Turmeric powder - ½ tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Red chilli powder - 1-½ tsp
Salt as required
Coriander leaves for garnishing
Oil for seasoning
Heat a pressure cooker pan and add 3 to 4 tsp of oil.
Once oil hot, add 2 chopped onion and fry it until onion become wilted.
Then add 2 bay leaf, 1 inch cinnamon stick, 2 cardamon, 3 cloves and 5 to 6 pepper corns
and mix it with onion.
Add 2 tsp ginger garlic paste and stir it. Cook this until raw smell goes out.
Then add 2 chopped tomato, required salt and cook for a minute.
Now add 1 kg goat paya and stir it to mix all together.
Add ½ tsp of turmeric powder and mix it and cook for a minute.
Add a cup of water and cook 5 minutes to bring it to boil state.  We need to always bring the
ingredients to boil before pressure cook in order to get tasty food.
Now cover the cooker with lid and weight and cook upto 8 to 10 whistles.
Switch off the flame, Let the cooker release pressure automatically.
Then, open the lid and switch on the flame and keep it in medium.
Bring to boil, and add 1 tsp cumin powder, 1 tsp coriander powder, 1-½ tsp red chilli powder
and mix it.
Let it cook for 5 minutes until the water reduced bit.
At this stage add required hot water based on your gravy need. Do not add cold water if you
need a tasty paya.
Check the salt now and add accordingly if needed. Bring to boil for another 5 minutes.
Finally Garnish with coriander leaves.
Now tasty, fantastic flavor paya is ready to serve.

Banana Blossom Patties/Vazhaipoo patties

Banana plant is a boon for this world. Each banana part is edible to consume and very
healthy. Banana leaf, raw banana, banana fruit, banana stem, banana flower, banana root,
skin of banana tree used for making food cups, plates and even making saree's. Banana
flower has kind of astringent taste which is good for producing fresh blood in our body. You
can’t get astringent taste easily from your regular diet. We have to find this kind of
ingredients and consume often to avoid lagging of enough vitamins from our body. Lets
make banana flower or banana blossom patties today.

Banana Flower - 1
All purpose flour -1 cup
Eggs - 2
Garlic pods - 4
Chopped onion - ½
Black Pepper powder - 1tsp
Salt as per your taste
Oil for shallow fry
Unpack the banana flower. In Indian market they usually tapped to avoid petals separate
during shipping. This will hold petals from long time attached with flower.
Remove the petals one by one until you see the white part of the flower.
Red color petals are very hard to consume, so we can ignore. We are going to use only each
flowers from this portion.
Clean the each flower by removing the stigma and fused petals. ( Stigma is the central part of
each flower and fused petals is the part will look like glass).
These two parts needs to be removed as it will not be eatable).
Cut the white portion into four parts and just remove the root alone.
Now add all the cleaned flowers into a pan with 2 cups water.
Bring this to boil and cook. Approximately it will take just 5 minutes.
Strain the water and finely chop them.
Squeeze the chopped flower with spatula to strain excess water using a filter.
Now add all the chopped and strained banana flower into a pan.
Along with this add a cup of all purpose flour, 4 chopped garlic pods, ½ chopped onion, 1
tsp of black pepper powder, required salt, 2 eggs and mix all together until you see a smooth
and consistency to make a patties. No need to add water as eggs will make sure to give a
good binding.
In a dosa pan, add 4 to 5 tsp of oil and heat.
Once oil hot, spread 1 or 2 tsp of banana flower mix into round shaped patties using a spoon.
Cook this side about 3 to 4 minutes.
Then flip into other side to cook. Make sure not to burn.
Now take it out and place them on a paper towel to remove excess oil.
Now the tasty and very healthy banana flower patties are ready to serve.
