Mushroom briyani is the best option for vegetarian who does not eat non-veg and
 wanted to eat briyani. This Mushroom briyani almost gives the same flavor of 
non-veg and while eating soy chunks, we can feel as Chicken. One of the Chinese 
restaurant which I went had all menu names with chicken but actually recipes 
made with soy chunks. Also this briyani can be made in the electric cooker. Let's 
try to make this recipe now.


Ingredients:


Basmati Rice - 2 cup
Button Mushroom - 8 to 10
Soy chunks - 1 cup
Onion - 1
Tomato - 1
Green chilli - 3
Lemon slices - 3
Coriander & Mint leaves - ½ cup
Curry leaves - 1 spring
Ginger & garlic paste - 1 tbsp
Cinnamon sticks - 1 inch
Green cardamon - 2
Cloves - 3
Anise star - 1
Black stone flower - 2 to 3
Chilli powder - 2 tbsp
Coriander powder - 2 tbsp
Turmeric powder - ½ tbsp
Garam masala - 1 tbsp
Salt to taste
Oil for seasoning
Ghee - 3 tbsp

Steps:


Soak the rice in water for 20 minutes
Soak the soy chunks in a bowl for 20 minutes
Cut the mushroom into cubes
Heat 3 tbsp oil in a pan. Once oil hot enough, add spices cinnamon stick, 
cardamon, cloves, anise star, black stone flower. Let it fry till golden color.

Then add sliced onion and split green chillies. Cook this till onion gets 
translucent.
Add curry leaves and stir it.
Then add chopped tomato, coriander and mint leaves. Stir it and cook for 10 
seconds.

Then add spice powders chilli, coriander, Turmeric , Garam masala powders and 
stir it.

Cook this mix for 5 minutes until the mushroom wilted and tomato become 
mushy.
Then add ginger garlic paste, sliced lemons and mix it.

Add 4 cups of water in it and transfer this into electric cooker pan.

Add soaked rice and close the lid. Cook this like a regular rice.
Once cooked remove lid and spray ghee on top. Then gently stir the rice.
Now the tasty mushroom & Soy chunk briyani is ready to serve.
