Whenever onion harvesting in my village there will be excess spring onion. We collect them in my child hood, we make fry using Spring onion alone for our rice or chappathi similar to other greens. It used to be very tasty and healthy. Now 5 to 6 spring onion cost is nearly 2$. So we can't make like that here since it is more expensive. Even in India towns we can't get it bulk for cheaper rate. Village life always easy and fun! Since No choice, lets make spring onion with Egg Fry.


Eggs - 2
Spring onion bunch - 1 (6 to 7 will be in a bunch)
Onion small size - 1
Green Chilli - 3
Butter - 2 table spoon
Mustard seeds - 1 tbsp
Urad dal - 2 tbsp
Chilli powder - 1 tbsp
Coriander powder - 1 tbsp
Turmeric powder - a pinch
Pepper powder - ¼ tbsp
Salt to taste


Heat butter in a pan.
Once it is melted add mustard seeds and Urad dal.

When mustard start spluttering add chopped onion and green chilli and stir it.
Once onion turns translucent, add Spring onion and stir it.
Then add chilli, turmeric, coriander powder and salt. Stir it.
Let it cook for a minute until the spice powders raw smell goes out.
Now crack eggs and add into this mix. Scramble it till it become burji.
Now the tasty Spring onion egg fry is ready. It will be a best choice for rolling with Chappathi.
