Amla/Nellikkai Pickle

Gooseberry (Amla / Nellikai) is a very old fruit in India. It is usually eaten raw or pickled. The fruit has been tested and proven to reduce the blood sugar and cholesterol. Amla has a thick flesh when eaten raw. When you first take a bite into the fruit, it tastes kind of bitter and sour. However after you swallow the fruit it gives a very sweet after taste. Kids often enjoy drinking a cup of water after eating the fruit. You can actually taste the sweetness of the fruit for quite some time when you swallow the water.



Ingredients:

Amla/Nellikkai – 200g
Mustard seed – ½ tsp
Red chilli powder – 2 tsp
Turmeric powder – ½ tsp
Asafoetida – ½ tsp
Mustard powder – 1 tsp
fenugreek powder – 1 tsp
Salt - 2 tsp
Sesame oil – 100ml

Steps:

Boil 200g Amla for 5 minutes. When it cooked, the Amla slices will separate automatically, and seed will come out.



That's the right time to switch off the flame and filter out from water
Now, heat 100 ml of sesame oil in a pan. Once oil hot add ½ tsp mustard seed. Now it will start splutter.

Simmer the flame and add 2 tsp red chilli powder, ½ tsp turmeric powder, ½ tsp asafoetida, 1 tsp mustard powder, 1 tsp fenugreek powder, 2 tsp salt.

Mix it altogether.
Now increase the flame and add cooked amla and mix it all together.

Switch off the flame and cool down.

Now Nellikkai/Amla pickle is ready to serve.
