Baingan masala is a very delicious and tempting Indian masala curry which has a very unique and special kind of taste. Mainly it is prepared from brinjals, groundnuts, tomatoes and lots of spices. Cooking level of this rich flavored gravy is easy and requires few minutes to cook is well. In this quick masala Baingan first the stuffing is prepared than gravy. It’s a bit spicy simply lip smacking curry which you can serve with roti, chappathi, rice.




Ingredients:
Brinjal/Egg plant/Baingan – ½ kg
Onion – 1
Tomato – 2
Cumin seeds – 1 tsp
Garlic pods – 6
Red chilli powder – 2 tsp
Coriander powder – 1 tsp
Salt as required
Fried ground nut powder – ½ cup
Oil for seasonings

Steps:
Heat 2 tsp of oil in a pan. Once oil hot add 1 tsp of cumin seeds.
Once cumin seeds spluttering, add 6 chopped garlic pods and fry it.


Add 1 finely chopped onion and stir it. Cook till translucent.

Then add 2 chopped tomato and stir it. Close the lid and cook for 2 minutes.

Add 2 tsp of red chilli powder , Salt as required, 1tsp of coriander powder and stir it.


Then add ½ cup roasted groundnut powder and mix it along with masala.


Add 1 cup of water and close the lid. Bring this gravy to boil.

Now add ½ kg cut brinjal into the gravy and add some water. Close the lid and cook for 10 minutes.



Now the tasty gravy is ready to serve.
